KEK PISANG YOGURT


Salam buat teman semua. Kek ini akak buat untuk majlis tahlil sepupu Akak yang berusia 9 tahun meninggal dunia semalam.  Yang paling menyayat hati..si kecil masih boleh memberitahu ibunya yang beliau akan pergi dan minta di bawa jenazah nya ke rumah datuk nya...Semoga roh beliau dicucuri rahmat hendaknya...

Resepi kek pisang ni Akak skodeng dari rumah Rozzan tapi kalau ikut resepi dia gunakan walnut..

Disini akak C&P balik resepi yang akak dapat dari beliau..terima kasih.


Banana Walnut Yogurt Cake100g butter (softened)
50g castor sugar + 40g brown sugar (or you can just use all castor sugar)
2 eggs lightly beaten with 1 tsp vanilla
320g mashed ripe banana with 1 tbsp lemon juice
125ml plain low-fat yogurt or normal yogurt

Sift together the following 4 ingredients:
130g plain flour
60g cake flour
1 tsp bicarbonate of soda
1¼ tsp cinnamon (I omitted)

Coarsely chopped walnuts or other nuts, toasted for an extra crunch (optional)

Method:
1. Cream butter and sugar till light and fluffy.
2. Beat in the egg mixture, little by little till well blended.
3. Beat in the mashed banana and yogurt till well blended.
4. Fold in the sieved ingredients, in 3 parts. Do not put in all at one go.
5. Pour mixture into a lined loaf pan and sprinkle the walnuts on top.
6. Bake for 55-60 minutes with oven temperature of 175 degrees or till a skewer inserted comes
out clean. If top browns too quickly, cover with aluminium foil.
